DINNER: Spaghetti and meat balls.
Meat balls- mince, grated carrot,zucchini, shallots,oats, sauce. Place meatballs on tray and bake in oven.
Cook spaghetti, add meatballs and tomato sauce.
At same time I baked 1/2 chicken to take on picnic tomorrow for Dave's birthday.

MAINLY MUSIC: Chocolate Brownies
Melt 125g butter, add 1/2 cup cocoa and few drops vanilla. Beat 3 eggs and 1 cup sugar together until light and frothy.Add choc mix to egg mix.Add 1 cup SR flour, pinch salt and 1 cup chopped walnuts. Cook in slice tin for about 30 mins at 180c.
DINNER: Apricot chicken and rice.
Chicken drumsticks, can apricot nectar, packet French onion soup and few dried apricots.
Bake at about 180c until cooked. Serve with rice, garnish with chopped parsley.

CANDIED PEEL: using cumquats we grew in the courtyard.
Slice cumquats finely, remove seeds. Place in bowl. Dissolve 1 teasp. bi-carb soda in 1 cup boiling water- pour onto fruit. Leave for 2 days, drain. Dissolve 1 cup sugar in 1 cup water, pour over fruit and cover. leave for 2 weeks. Dry in single layer in oven, then dip into syrup again and dry again in oven.

Spicy Tomato Sauce: 2.5 kg veges (ie tomatoes, 2 capsicum,2 big pieces ginger,1 onion), 5 cups white sugar,5 cups white vinegar, 1/2 a bulb of garlic, few hot chillies, paprika.
Put all vegetables into blender and blend, put into pan with rest of ingredients. Simmer till consistency of jam.

DINNER: Pork Pasta...cold roast pork cubed, spinach, coriander, parsley, coconut cream, zucchini, shallots and a scoop of spicy tomato relish. Serve with fettucine.
Days 44 and 45
On day 44 we went to Yamba and had a picnic lunch, then went to the movies and saw Samson and Delilah. That night I cooked fritata and salad for dinner. The fritata had 6 eggs, cream, chopped onion, spinach, grated carrot with slices of tomato and grated cheese on top.
The next day for dinner, we hadroast pork in the BBQ with roast potatoes, onion, pumpkin and sweet potato, with peas, beans and gravy.

MAINLY MUSIC: Caramel Slice:
Base- 1 cup SR flour, 1 cup coconut, 1/2 cup caster sugar, 125g butter. melt butter, add to dry ingredients. Press into slice tin, cook 12 mins then cool.
Filling- Can condensed milk, 20g butter, 2T golden syrup,1 passionfruit. Cook all together few mins, spread onto base...cook further 10 mins.

DINNER: Chicken pasta in creamy red wine sauce.
-fry onions and garlic, add halved brussels sprouts and mushrooms.
-cut chicken thighs into pieces and fry.
-addd hot paprika, salt and pepper.
-add cream and red wine.
-cook pasta spirals.
- serve chicken with pasta and grated cheese on top.
Our strawberries are ripening now. They are the biggest ones yet!

Make a scone mix, roll it out, spread bruschetta olive mix, sprinkle with cheese and roll up. cut into pices and place side-by-side on a scone tray, brush with beaten egg and sprinkle with Moroccan seasoning.
DINNER: Spinach/ ricotta canneloni
-fry onions, garlic and spinach.
-add ricotta cheese, salt, pepper and paprika.
-put layer of pasta sauce in casserole dish.
-fill canneloni tubes with ricotta mix, and place on sauce in dish.
-put any remaining filling and sauce over top and sprinkle with cheese.
-bake about 20 mins at 190c.

Today we drove home from Lismore.
When we got home we had toasted sandwiches for lunch.
For dinner, we had fish pieces with cajun seasoning and fried rice... the fried rice had roasted pumpkin, onion and garlic, eggs and snap peas, soy sauce, dill and fetta cheese.

Today we are having a BIG BIRTHDAY PARTY at Julie's place, so most of this morning was spent preparing food for the party. I made little meringues with fresh whipped cream between them, chocolate crackles and savouries of cheese and pickled onions for the retro sausage dog.
Mum often used to make the meringues whenever she was going somewhere that required her to take a plate.

Days 30 and 31
DINNER: Salmon, spinach and fetta penne. (no picture)
Fry red onion, sweet potato, add coriander, spinach,shallots, salmon, cream and chilli powder. Cook penne....add to the salmon mix and serve with cheese on top.
DINNER: Crumbed fish with cous cous.
Cou cous...red onion, snap peas, sultanas, grated carrot, olives, cucumber, fetta cheese, almond flakes, Moroccan seasoning, mint and olive oil.

Bake potaotoes in BBQ.
Shallow fry crumbed chicken in olive oil. Cut through cooked potato, add sour cream, lettuce, cucumber,shallots, coriander, parsley, tomato, grated cheese, then slices of the chicken on top.
BIRD CAKE: this cake is baked for the finches...the egg shells are crushed in the cake with the other ingredients...great for the birds but a bit gritty for us!!

DINNER: Vegetable soup with savoury muffins....
Soup- sweet potato, pumpkin, Italian parsley, spinach, onion,salt and pepper...cook till tender, blend with stick blender and add a dob of butter.
Muffins- SR flour, plain flour, salt, mixed herbs, 2 eggs, 1 cup milk,35g parmesan and grated tasty cheese.
LUNCH: Pizza topped with tomato paste, left-over chicken and stuffing, fried onions, garlic and mushrooms, parsley,olives, eggs marjoram basil cheese on top.

Day 25
LUNCH: Chicken and Egg Salad
The chicken was left-over from last night.
The eggs were from our chooks.
Two types of lettuce, coriander and parsley were from our vege garden.
DINNER: Cajun Fish (Dorey) with brown Rice Other ingredients of salad were..
Served with tomato slices and olives with a dollop Tomato, cucumber, capsicum,
of sour cream on top. Haloumi cheese and dressing.

LUNCH: Toasted foccacia with sour cream, apple and tomato chutney, cold lamb, tomato, cucumber and grated cheese.
DINNER: Chicken and Jacket Potatoes and veges
Chicken was cooked in the Weber BBQ, along with the potatoes and pumpkin.
Stuffing... mix in food processor- bread roll, dried apricots, onion, salt and pepper, Moroccan seasoning, drizzle of olive oil.
Served with coulflower and parsley sauce, carrots and zucchini.

1 cup SR flour
1 cup sugar
1 cup coconut

I used a frozen base this time

LUNCH: Made rolls using sheets of puff pastry,
spread with ham, cheese and tomato, roll up,
cut into pieces, brush with milk and sprinkle
with herbs. Bake in hot oven about 10 mins.
DINNER: Arrived home late in afternoon from
Wally, so cooked something quick and easy...
Baked crumbed fish pieces with salad,
with a bottle of Cascade Blonde.

After church we drove Tessa home to Byron bay. We then made ham rolls and coffee in the car on the way to Wally.

MORNING TEA: Pikelets
2 cups flour
pinch of salt
1 T caster sugar
1 egg
30g butter
1 1/2 cups milk
Mix all together in bowl using wire whisk
until thick, smooth batter.
DINNER: Greek Lamb in BabyQ with Roast Vegetables.. ( potatoes, pumpkin, sweet
potato, capsicum, tomatoes, carrots...
roughly chop veges in reasonably big pieces,
drizzle with olive oil, sprinkle with salt and
pepper, mint and dill). Serve with peas/beans.
