Days 219 to 223

Today we drove up to Vincenzo's at Stanthorpe and had pies for lunch with Robyn and Peter.
We drove home this arvo. For dinner we had antipasto from Vincenzo's
with fresh italian bread sticks...yum!
Mainly Music was on today, so I made a 6 cup slice with sultanas,
almond meal, and lemon icing and coconut.


For dinner we had pork sausages on the BBQ with warm potato and kumara salad.

Tonight we had a quick meal prior to going to a Ray White meeting for landlords...
Baked, seasoned chicken legs with salad.

Chicken kebabs with rice and salad tonight.

Friday night it was savoury mince and pasta.






Days 212 to 218

For Mainly Music this week I made chocolate coconut bars.
Melt 125g butter, add half cup brown sugar, 1 cup coconut, 1/2 cup plain flour, 1/3 cup SR flour,
1 Tbsp cocoa, then lightly beaten egg. Spread in tin and bake about 20 mins at 180 c.
Ice with chocolate icing and sprinkle with coconut
Monday we haad savoury mince with veges and cheese on top.
For dinner on Tuesday we had grilled pork chops with brown fried rice.
Wednesday we had salmon pasta.
Thursday we had baked potato with sour cream, bacon, eggs, diced tomato, and cheese on top.
On Friday, Robyn and Peter stayed over in their new caravan.
For dinner we had blue-eyed cod, garlic prawns and Greek salad.

On Saturday night we had tajine of blade steak, garlic, onion, tomato, chick peas, mushroom, Moroccan seasoning plus macaroni.

On Sunday we went up to Wally with Robyn and Peter.
Robyn cooked chicken in creamy sauce with rice for dinner,
plus peaches and cream for dessert which I cooked.




Days 205 to 211

Salmon pasta...
Can of salmon, onion, capsicum, broccoli, cream,Tabasco, mushrooms,salt and pepper.

Chicken kebabs with rice and salad on Tuesday.
On Wednesday, Joe cooked green chicken curry and rice for dinner.

Thursday was baked, seasoned, chicken pieces with vegetables...
Joe's last meal with us before heading home to Sydney.

Friday we had home made pizza, on a Bakers Delight pizza base.
Sunday was Valentines Day...went to The Crown Hotel for lunch where Dave had reserved a table, and a bunch of red carnations were on it!!!

For dinner that night we had tajine with lamb chops, potato, pumpkin, sweet potato, onion and macaroni.




Days 198 to 204

Monday it was tajine of chicken with chick peas and veges with rice.


For Mainly Music this week it was passionfruit and walnut 6 cup slice.

Dinner tonight was crumbed chicken with potato bake and green salad.
Potato bake cooks better if the slices of potato are par-boiled before adding cream, etc.
Wednesday was sausages on the BBQ with left-over potato bake plus salad.

Thursday was good old spaghetti bolognaise.


We'd had a pretty busy week renovating at Kent Street,
so we went to the RSL for dinner on Friday night.
Saturday night was curry and rice.
Sunday was pumpkin soup with bread rolls.






Days 191 to 197

For dinner on Monday we had crumbed chicken pieces with salad.
On Tuesday we had crumbed chicken steaks with cous cous.
Tuesday was Australia day...
For afternoon tea I made 6 cup slice with cherries and almond flakes.
And dinner was, of course, lamb chops on the barbie with veges.


I love our tajine!
For dinner on Wednesday we had tajine of marinated, minted, lamb chops, with garlic, onion, capsicum,tomatoes, mushrooms,cannelini beans, extra mint and salt and pepper.

Thursday was rissoles with salad
Friday...sausages on BBQ with salad and bread rolls
saturday, chicken and salad picnic lunch at Wooli
Sunday...Home made pizza for lunch
Cheese and bacon rolls for dinner.




Days 184 to 190

This week must have been a busy week, as I don't seem to have many photos of meals.
On Monday, Bryan and Kathy stayed over.
For dinner we had Greek butterflied lamb on BBQ with Mediterranean salad.
On Tuesday we had Salmon Pasta.
On Wednesday I was too tired to cook as we had spent 10 hours renovating at Kent Street house, so we heated up a couple of Shed Packs. ( Left-overs we keep in the shed freezer)
For dinner on Thursday we had Stir fry and rice. The stir fry was made with left-over lamb and ham with onion, garlic, ginger, capsicum, hot paprika, can of diced tomatoes, cannelini beans and coconut cream.
Friday night we went to the Thai Restaurant at South Grafton Bowling Club with Joe.
On Saturday we had chicken and chick pea tajine.
On Sunday we went to Georgie's at the gallery with Sharyn and Ed and Joe.
For dinner that night we had crumbed chicken pieces and salad.

Days 177 to 183

Made the 3rd batch of Mango Chutney today.
Good old spag bol for tea tonight!

Tacos today


On Wednesday we had marinated chicken wings with rice, cucumber and capsicum.
Thursday it was lamb shanks and veges.
Friday dinner was chicken kebabs with cous cous.



On Saturday all the family came home for our family Christmas Dinner in January.
The Menu....very child-friendly!
baked ham, baked seasoned chicken pieces, Mediterranean baked veges,
green salad, noodle salad, fruit and ice cream, punch, small dinner rolls.
