Days 169 to 176

Sausage rolls with salad.
These sausage rolls are an easy favourite.
You just roll small sausages in pieces of frozen puff pastry and bake!
We had heaps of mangoes this year...most we've had for ages,
so several batches of mango Chutney were made.

Tonight we had meat balls and veges for dinner.
For meat balls..
Into blender I put 2 eggs, a handful of fresh parsley, rosemary, oregano, chopped onion.
This was mixed with the minced beef along with about half a cup of rolled oats.
Shape into balls and bake on tray in oven until cooked...
(low in fat as they are baked, not fried.)

Today we were in Coffs Harbour to see a wedding.
When we got home we had an easy dinner-
Bought a cooked chook and had salad, kiffler potatoes in skins with butter
and left-over macaroni bake.






Days 162 to 168

On Monday Kathy cooked butter chicken with Basmati rice,
plus ice cream in crunchy choc-chip wafers for dessert.
On Tuesday we drove from Sydney up to Wally
where we had baked chicken pieces, veges and rice.
For dinner on Wednesday we had sausages from the prize-winning Tenterfield butcher
with potatoes, sweet potato and beans.

Thursday was New Year's eve.
We christened our new Christmas tajine.

Beef Tajine
Beef, tomato, mushrooms, carrot, kumara, onion, garlic, ginger ,turmeric, cayenne pepper,
cinnamon, salt, pepper....served with cous cous.


On Friday we had Thai marinated pork on BBQ with baked potatoes, sour cream, lettuce, cheese, tomato, cucumber, red onions and shallots.
On Saturday I went to Anth and Serena's to make curtains. Serena made tacos...yumm
Dave and Joe cooked rissoles with rice.
For lunch on Sunday I made Olive, Rosemary and Parmesan muffins
and had it with pumpkin and veg soup.



Days 155 to 161


For dinner on Monday we had currried prawns and rice.
On Tuesday it was BBQ marinated pork steaks with macaroni cheese.
On Wednesday we drove to Sydney for Christmas.
On our arrival at Bryan and Kathy's we enjoyed Kathy's famous potato and corn pies for dinner.
The following day was our 15th wedding anniversary.
We had lunch at Chinatown bistro
followed by Thai for dinner with Gary and Carol at Turramurra.
Friday was Christmas Day....this year at Bryan and Kathy's.
Kthy made her delicious baked ham plus lots of other wonderful Christmas fare.
Saturday and Sunday we enjoyed lots of Christmas left-overs!

days 148 to 154

Tomorrow is the Mainly Music Christmas party.
I made friands and guacamole dip.
Guacamole Dip-
For base layer, spread one can of refried beans
Next layer- mash a couple of avocadoes with a touch of Tabasco, lemon juice and garlic
Top layer of sour cream topped with chopped chives and sprinkle of paprikaFor dinner on Monday night we had Chicken Boscaola with fettucine...one of my favourites..
Unfortunately I can't seem to rotate the photo ?!?



Tuesday night's dinner was meat pie with maashed potatoes and veges.




For dinner on Wednesday we had steak on the Baby Q with cous cous.
Thursday was VegetableLlasagne with BBQ pork sausages



Friday evening was our Ladies Group Christmas party.
I made a cheesecake with cream and stewed cherries on top





On Saturday we went down to Port Macquarie for Lacey's first birthday.
On the way home we bought meat pies from Freddo's at Frederickton.
On Sunday we went to Byron Bay to have lunch with Tessa and John.
On the way home we had fish and chips at Ballina.
Two days in a row with takeaway for dinner!!!






days 141 to 147...Monday to Sunday

Sunday dinner was an easy one....spaghetti bolognaise
for dessert we had stewed apple and rhubarb with custard.


On Friday I went to Lismore to babysit grandkids, so Dave and Joe had to cook their own dinner.
For dinner on Saturday we had marinated pork chops cooked on the Baby Q, with veges.




On Wednesday I don't know what we had..
for some reaason I didn't record the meals from this day??
On Thursday we had marinated chicken kebabs with rice and salad.


On Tuesday we had pork spare ribs with rice and salad






For dinner on Monday we had corned silverside with vegetables and white sauce.
