Days 138, 139 and 140




DINNER: Butterfly roast lamb and roast vegetables.


DINNER: BBQ steak and warm potato salad.


LUNCH: Pizza with lamb slices, roasted veges, olives, fetta and grated cheese.


DINNER: There was a church meeting tonight, so I took a plate of sausage rolls...sesame and cayenne on top.

Day 137


Joe arrived today to stay with us for a while while he works with a surveyor in town.

DINNER: Beeef and vegetable lasagne and Greek salad.

Days 135 and 136


DINNER: Spanish meatballs with cooked tomatoes and cheese on top.
DINNER: Crumbed pork schnitzel with mushroom creamy pasta.

DINNER: Pork schnitzel with vegetables and gravy.

DINNER: Tempura prawns with salad.

Days 131 and 132

DINNER: Schnapper, cooked whole on BBQ, with salad.
Today I started cooking various Tapas foods for a Spanish party we're having tomorrow. I don't seem to have any photos of the foods. I'll check the other camera later!
TAPAS MENU: Sangria, meat balls in sherry sauce, chicken and chick peas in spicy tomato sauce, goat cheese with tarragon and garlic marinade, figs with walnut and honey, veal sausages in white wine.

Day 130


DINNER: Mince and vegetables in butter chicken seasoning with penne.

Day 129


DINNER: Crumbed chicken, mashed potato, carrots, zucchini and broccoli.

DINNER: Filet Mignon with cous cous.

Days 126 and 127




LUNCH: Pizza with thin slices of left-over pork ribs, caramelised red onions, spicy tomato sauce, olives, grated cheese...top with dollop of sour cream.


I went to Goonellabah to babysit, so didn't cook dinner. Dave cooked himself some fried rice


The next night for dinnner, I cooked rissoles with potato, kumara and broccoli.

MAINLY MUSIC: 6 cup slice with dates, walnuts and coffee icing.

Day 125


DINNER: Pork spare ribs with rice, green salad and sour cream.

Day 124


DINNER: Crumbed chicken with penne pasta.

Pasta...onion, capsicum, mushrooms,broccoli, salt and pepper, Tabasco, cream, soy milk.

Days 122 and 123


Tonight we went to a landlord's seminar where we had drinks and nibblies...didn't cook dinner.

The next night for dinner we had chicken rissoles with veges and gravy.

Days 121


DINNER: Seasoned chicken on BBQ with asparagus and mashed potato, seasoned with taragon, chives and continental parsley...white taragon sauce on asparagus.

Day 120


MAINLY MUSIC: 6 cup slice...1 cup each of SR flour, cocnut, sugar, milk, dried apricots and walnuts, plus cinnamon.

DINNER: Warm new potato salad with silverside.

Wash new potatoes, cut into cubes, leave skin on...boil with cubed carrot until tender...chop mint, chives, capsicum, shallots, sun-dried tomatoes, cold silverside...put cooked and chopped ingredients into bowl, add mayonnaise and mix.

Day 119


DINNER: Chicken pesto with fettuccine.

The chicken...brown chicken cubes, add pesto and a splash of cream and white wine.

The pesto... basil leaves, cherry tomatoes, parsley, 2 cloves garlic, olive oil, 1/2 pack slithered almonds- blend together.

Days 117 and 118


Today we had leftovers prior to going to the movies in Tenterfield to see their short film festival plus Balibo...we had wine and cheese/nibblies at the theatre.

The following day, back home, we had fish, wedges and salad for tea....an easy meal after driving home from Wally.

Day 116




DINNER: Mince and potato pie...saute onions, add mince, tomatoes, plain flour, spicy tomato sauce, salt, thyme and broad beans. Topping...Mashed potatoes and kumara with cheese sprinkled on top...bake till golden.

Dessert: Mulberry crumble

DINNER: Turk's Head Pumpkin stuffed with broad beans, garlic, small fresh spuds, olive oil then baked, with chicken kebabs.

Day 114


MAINLY MUSIC: Banana cake

DINNER: Pork loins on BBQ with veges....zucchini and carrot on BBQ, Boiled potatoes and kumara...garlic, nectarine and white wine creamy sauce.

Day 113


DINNER:Mince and veg penne....onions, capsicum, carrot, zucchini, mushrooms, mince, pasta sauce, chilli powder, oregano, thyme, parsley...serve on penne pasta with cheese on top.

Days 111 and 112


Today was Jill's birthday, so we went to the Ulmarra pub for her party. I had chicken in filo with blue cheese and artichoke sauce and salad. Dave had Moroccan lamb cutlets with cous cous.

The next day we went to Jill and Manfred's where we had pizza from his pizza oven...we took our own toppings.

After the pizza, we had vegetable soup for tea....pumpkin, zucchini, carrot, onion, plus salt, pepper and butter.
As I didn't have any photos of food here, I thought I'd put in a photo of the frog that has been seen regularly in the kitchen late at night... cute, isn't it!

Days 109 and 110


Today was Jacaranda Thursday in Grafton, so we had lunch at Roches' pub- German Beerfest- kransky and mash with mushrooms and tomatoes. It was pretty filling, but quite delicious.

DINNER: After the big lunch, we had bread rolls with left-over silverside, cheese and lettuce.

The next day, being Friday, the fish man was in town, so we bought some Samson fish and prawns....cooked it with creamy garlic/mushroom sauce, and served with rice, cucumber and avocado.

Day 108


DINNER: Corned Silverside with potato, kumara, onion, carrots and beans, with parsley sauce.

Day 107


MAINLY MUSIC: Speedy Banana Loaf- page 42, Muffins, Scones and Tea Cakes.

DINNER: Steak, polenta and salad.

Day 106


DINNER: Curried sausages and rice.
With the sausages were onion, capsicum, carrrot, apple, sultanas and curry powder.

Days 104 and 105




Still at Nambucca. Cooked bacon and eggs for brecky, on fried rounds of French bread.


LUNCH/DINNER: Mid-afternoon picnic al-fresco/anti pasto, between movies.
The following day we bought fresh bread from bakery in Nambucca and made gourmet sandwiches for lunch/dinner.

Day 103


Today we drove to Nambucca Heads with our camper (Rosie), to see the Sydney Travelling Film Festival at Bowraville. When we arrived we went to Woollies and bought an assortment of anti-pasto foods while there.

LUNCH: pork brawn, cheese and lettuce sandwiches.

DINNER: in the car at Bowraville just before the first movie...pork pies and salad. We had wine and nibblies at the theatre between movies.

Day 102


DINNER: Half honey/mustard chicken on BBQ with cous cous.. (spinach, tomato ,parsley, coriander, mint, sultanas ,flaked almonds, cucumber ,lemon juice, olive oil and Moroccan seasoning).

Day 101


DINNER: Pizza...caramelised onion, garlic and capsicum, olives, cold lamb from roast, cold chicken from kebabs, Philly Cheese dobs, grated cheese, on Baker's Delight Pizza Base.

Day 100


DINNER: Honey-mustard chicken kebabs and rice with tomato, cucumber and avocado.

Day 99

MAINLY MUSIC: Florentines...double quantity, some for Mainly Music and some for home....4 cups cornflakes (wholemeal), 1 pk glace cherrries, 1 pk glace ginger, 1 pk slithered almonds,1 can condensed milk, 1 cup chopped apricots. Bake about 10 mins at 190c.
DINNER: Greek lamb in BBQ with roasted Mediterranean vegetables.

Day 98


DINNER: Lasagne and salad.

DINNER: Chicken rolls with spinach and pine nuts. I used frozen flakey pastry for this. Into the chicken mince I put chopped spinach leaves that were chopped and wilted in hot water, coriander, parsley, finely chopped onion, salt and pepper. Before baking, the rolls were slashed on the top and brushed with beaten egg and sprinkled with parmesan cheese.

Day 95




LUNCH: Today we bought fresh king prawns and fish from the seafood man who goes to the carpark of the Jacaranda Hotel every Friday. So, for lunch we had fresh bread rolls with prawns, lettuce, thousand island dressing and garnished with dill (from our garden).

DINNER: Fish with polenta and veges.

Day 94


DINNER: Half chicken in BBQ with mashed potato, cauliflower au gratin with dill, and beans.

Day 93


Today we went to the movies at Yamba, and had our own mini film festival. We saw Mao's Last Dancer, Julie and Julia and Charlie and Boots. For lunch we had a quick sandwich and coffee out of the picnic basket in the cinema carpark. Afternoon tea was included at the movies as a fundraiser, so we had a quick and easy dinner....frozen hash browns and prawns with salad.

Day 92


DINNER: Butternut Pumpkin filled with Chicken and Mushroom Macaroni. To make this dish, I firstly halved the pumpkin, scooped out the seeds, added chopped capsicum and garlic with olive oil and baked it till soft. While it was baking, I cooked the chicken and mushroom creamy sauce and the macaroni. The cooked macaroni and sauce was spooned into the pumpkin with cheese on the top.

Day 91


MAINLY MUSIC: Honey Jumbles (Recipe card 6- Cookies and Biscuits- Great Australian Home Baking)

DINNER: Tex-Mex Soup with Cold Lamb salad.

Day 90


DINNER: Tex-Mex Soup with French bread....Fry off onion, garlic, capsicum and carrot. Add can chopped tomatoes, can of cannelini beans, sliced cabanossi, chopped parsley and coriander,chilli powder(hot, home-made), salt and pepper.

Day 88 and 89


DINNER: Chicken kebabs with rice and peas, tomato and banana slices.
Today I did the next step for the mulberry wine. Unfortunately the photo is sideways...I didn't rotate it on the other computer, and the disc is a read only file.
Glenn and Margaret came today. They were in Coffs celebrating their 29th anniversary. I made 6 cup slice for afternoon tea, and Roast boned lamb and roasted veges (Mediterranean style) for dinner.

Day 87


DINNER: tonight we had left-over risssoles with fried rice. For the rice, I fried the onions, capsicum and pumpkin cubes, added it to the cooked rice with tarragon, mint, coriander, salt and soy sauce.
