Days 361 to 365

On Tuesday we had baked, seasoned chicken pieces with baked veges and cauliflower au gratin.

On Wednesday we had beef tajine and rice...I used red curry paste for this one and cocnut cream.





For afternoon tea I made the 6 cup slice recipe, and put the mixture into muffin tins. I used walnuts, apple, sultanas and cinnamon for these.

For dinner on Thursday we had

crumbed fish and cous cous.

On Friday we had dinner at Leanne and Graham's.















For lunch on Saturday we had tomato, red onion, avocado, bacon and cheese melts, with a sprinkle of Tabasco sauce.




















On Saturday, day 365, we had a chicken tajine with rice pudding for dessert.













Days 355 to 360

On Wednesday we had beef tajine and pasta. On Thursday it was chicken boscaola with fettucine.















On Friday I made double quantity of friands to take to Archer's 1st birthday party tomorrow.
When we got home I made pizza.












On Saturday we had lamb loin chops with veges.

On Sunday I made vanilla slice....used the 12 egg yolks left from the friands.


I love vanilla slice!


Tonight I made Thai rissoles with veges, plus mushroom and onion gravy


Tonight we had vege lasagne with bacon and cheese topping.


Days 350 to 354

Today we went to Wauchope and saw Aunty Judy.

On the way back to the caravan park we bought some flathead fillets

. I didn't have any breadcrumbs or flour, so coated the fish with crushed Cheds.

It was pretty tasty!

We enjoyed the fish with salad and bread and butter.. and a bottle of white.
The last night at S W Rocks, we went to the club for dinner with the Quadrios.
Back home tonight...had Penne boscaola.


On Monday night we had mince and veges with pasta.

Tonight it was curried sausages and rice.

Days 346 to 349 South West Rocks

Tonight we had crumbed chicken with mashed potato and kumara, and cauliflower au gratin
Today we drove to Horseshoe Bay Caravan Park at South West Rocks.
For dinner we cooked sausages on the baby Q with salad and a baked spud.


On Wednesday we went to Port Macquarie and had lunch with Stu and Lacey.

For dinner we had chicken mince with vegetables and macaroni.

On Thursday we cooked pork loin on the BBQ with roast veges.

For dessert we had apple, pear and banana with brown sugar, butter and drizzle of port,

cooked in a foil container on the BBQ.

Days 340 to 345

For dinner on Tuesday we had crumbed chicken breasts with potato/cauliflower bake
This was a vegetarian cobbler (p 66 The Vegetarian Cookbook)


Here we had chicken meat balls with fettucine and creamy tomato sauce.


For dessert we had caramelised pears and custard.


For Kirra's birthday party, I made arrowroot biscuit faces.

For dinner that night we had beef tajine.

For dinner tonight we had chicken kebabs with salad and rice.


Days 335 to 339

For lunch today we had pea and ham soup in the courtyard...always better the next day!
For dinner we had savoury mince with brown rice.


Being Friday, Dave bought some flake and Balmain Bugs from the local fish man.

For dinner we had fish and bugs with warm potato salad and garden salad.


Tonight it was beef, tomato and chick pea tajine with macaroni.


On Sunday I cooked home-made rissoles accompanied by

mashed potato, kumara and cauliflower au gratin.


On Monday, for Mainly Music, I made coconut jam slice.


For dinner on Monday we had creamy salmon...

with onions, capsicum,kumara, mushrooms, shallots, sour crream, milk, chilli pdr... and rice


Days 330 to 334

For dinner on Wednesday we had butterflied chicken legs with veges.

Tonight, Saturday, we had home made pizza. Anth and Serena, Kirra and Zac, came for lunch on their way home from Goonellabah. We had stuffed butterflied roast lamb and pasta.


For dessert we had blueberry and banana crumble.

For dinner we had pumpkin soup.

Tonight we had curried sausages with rice.


On Tuesday we had kebabs with brown rice, plus a dollop of sour cream.




For lunch on Wednesday I made pea and ham soup....just like Mum used to make!



For morning tea I made rock cakes.
